A: No, they sell the rimacinata as ‘extra fancy’, the English language packaging they use is unclear.

**Q: Is this white or whole wheat flour?**
A: Semolina is Coarsely ground durum wheat. This is not whole grain, though, because there is no bran or germ evident in it. Extra fancy durum flour is ground more finely and is used in some breads. One person said it is corn, but it is not. Durum is yellowish wheat.

**Q: Is this enriched?**
A: Not enriched    is Europe is illegal

A: Yes it is pretty finely ground, I gave it for a gift and the person enjoyed it very much, good luck

It seems good, I made egg noodles with it, and they held their shape and tasted good. I did use a 50/50 blend of this and regular flour (as King Arthur pasta flour does). I'm just not quite sure for my layman's taste, that the price is worth it. Maybe if you are an expert pasta chef!
