A true masterpiece of American cheese-making. Made like fresh Monterey Jack and further aged for another 7 to 10 months. Firm, pale yellow with a sweet nutty flavor. Tom Vella began production in 1915 in Sonoma and production has not slowed since. Wheels are still hand formed and contain vegetable rennet rather than animal rennet. It's characteristically dark brown rind is a result of a safflower, unsweetened cocoa powder, and black pepper rub which allows for an uncracked, evenly aged finished cheese. This cheese is well suited for both reds and whites, an added bonus from its well balanced flavors.

Exactly what I was looking for
This is a delicious dry jack which i was looking for so I wasn’t disappointed it did come with two cold packs that had defrosted but we’re cool beings it winter now but would recommend additional ones for the future the cheese itself is delicious and not disappointed at all

One of my favorite hard cheeses
I first tasted this when my godfather sent me some from California back in the 1960's. Wow! I have tried hunting for a source ever since, but it is not carried here in the Great Lakes area. I decided to check out Amazon and was thrilled to find a source that I could afford (not that it is cheap by any means). I ordered some and it arrived as promised, tasting just as wonderful as I remembered. I'm so happy to bring it back into my life again. If you like dry grating cheeses, you should try this one.(I actually just cut off pieces to nibble on as a snack.)

Fine California Cheese!
Vela Dry Jack is one of the best hard cheeses I’ve ever had. I have been enjoying ever since I was introduced to it many years ago by my local cheese monger. It’s a smooth, nutty semi hard cheese suitable for fruit pairing with pears and the tarter apples like a Braeburn or a honey-crisp. It also grates well and can be a great tweaked for that Mac-n-cheese dish.

Just like old times
Having lived in the California for 20 years “Dry Jack” was my favorite cheese. But it was hard to find it in my new home in the Midwest. Now I got it from Amazon and it’s just like old times again!

Not as advertised
Was suppose to be 1 pound. Actual weight 13 ounces. Considering the price, this was unacceptable.
