A very different plant based cookbook. Vegan alternatives to my favorites.
I saw this book at a local flower conservatory. I didn't have time to really look at it. I figured I would give it a try. There were a couple recipes that caught my attention- lasagna, curries, eggplant parm.Upon receiving it from Amazon, I realized the author is from Wales. Not all of the ingredients match up in America. The book does give the American equivalent like courgette is a zucchini. An aubergine is an eggplant.What I like about it is that there are alternatives to foods I can no longer enjoy because of dairy (lactose intolerant). I am curious about the lasagna and eggplant parm. Two things I haven't had in years. There are pasta dishes that have wholesome ingredients that I can make with ease.I have tried 2 recipes out of this book. Both I have been extremely happy with. The barbecue sauce for the vegan meatloaf is delicious. The vegan meatloaf is delicious. I have also tried the sauce that comes with the eggplant. It is easy to make and very tasty. In both cases, I didn't have to play with the recipe. Just a little more salt and it was perfect. The family was happy with it.There are what feels like many recipes that contain tofu. This was at first a turn off. I eat tofu but it isn't my go to.I have also encountered ingredients that aren't so accessible here or I don't have on hand. The recipes are easily improvised. No chickpea flour? Use a flour that is on hand. In my case I used regular white flour. Coconut sugar? I substituted regular sugar with awesome results. There is an expensive ingredient to make scrambled eggs. I was disappointed to see a can of it cost $11. it was discouraging until I tried a few recipes. I was sold on the book.5 stars: This is the type of plant based cooking I would find in one of those boxes delivered to the door. The recipes are excellent. Easy enough to make. Easily substituted. When I saw all of the tofu recipes I questioned if this was the book for me. After trying a few recipes, I am sold and definitely keeping this book. I can't wait to try more recipes.

Passionate, Exciting Recipes
I have had this Kindle book for a couple of weeks now and am so excited to make more of the recipes because the one's I've made so far have all been winners. The first photo is of Dad's Potato Chili Bake which is a hearty dish perfect for big families as well as pot lucks (if we ever get to do those again...), visually stunning, easy to put together, and delicious. One caveat: The British lingo doesn't always translate over to U.S. lingo; for instance "tomato puree" is what the U.S. calls "tomato paste". Also, Gaz doesn't always give us instructions to the "t" so a beginning cook (or even an experienced one like me) might not know, for instance, that we need to strain out the onions and bay leaf from the infused béchamel sauce in his amazing Lasagna. I happened to know to do this since I watched the You Tube tutorial, and it is common sense, since that is what infused implies, but specific instructions are always best. Now back to this Lasagna. Yes it is the best. I've tried a ton of recipes and this one checks all the boxes for me, mostly due to that béchamel. Maybe it was using the oat milk that did it but this lasagna is just as good the next or third day as it is the first day, which I haven't found to be true with other recipes where the sauce just doesn't hold up. But this béchamel is very sturdy and luxurious. In the attached photo , it looks like a layer of cheese but I did not use any vegan cheese in the sauce. The recipe called for baking at 350 for 45 minutes but I baked it at 375 for 45 minutes. I also made the BBQ "Meat" Loaf. Be warned about the cumin in the BBQ sauce. I knew that 1 tablespoon was too much and I used 1 tsp instead and even that was a bit much for my taste. Next time I will substitute chili powder. All in all, this is a beautiful book full of passion and inspiration. Thank you, Gaz, for this wonderful cookbook.

Superb quality!!
I follow Gaz on YouTube and everything he cooks I want to try seriously!! So when I heard he had a new book Plant's Only Kitchen with simple, delicious healthy recipes, I knew I had to purchase. For starters the quality of the book is superb!! My brother saw the book and was skimming trough pages and asked was this book pricey because it's looks like it was. When I told him the price he was shocked! I am thrilled with book and love the less than 15 min breakfast recipes. It contains a variety of recipes from curries, stews, soups and even delicious desserts all vegan recipes!! Also appreciate the icons next to each recipe so you know which recipes are Batch Cooking, Meal Prep, Gluten free, 15 min or One Pot Meal. The only thing I wish was different is the size of font I wear eyeglasses so bigger font would have been highly appreciated. Other than that I'm extremely happy with the book and will try to replicate as many recipes as I can. Highly recommend you purchase believe me you won't regret it. I'm new to vegan eating but Gaz book makes it look simple, delicious and very colorful recipes packed with nutrients and flavors!
