Delicious cheese
This is the best tasting cheese and very hard to find at times . It’s made with sheep’s milk . It’s mild and the texture is between mozzarella and provolone .

Strong and Complex
I am new to sheep's milk cheese; this cheese was my gateway into trying other types. The flavor is strong but not overwhelming. Pairs well with dates, figs, nuts and grapes.

Absolutely delightful
This cheese is marvelous! Buttery and nutty, not very funky and is simultaneously a bit smooth and almost crumbly in texture. A new favorite for sure. Just delicious. A hard cheese, if that wasn't obvious.

This is one of my all time favorite cheeses
I love this cheese for its creaminess that still manages to be firm. Doesn't stick to the roof of your mouth. It's got a little tang, but not sharp, and just enough salt. It's really well balanced.

A Gem from the Pyrenees!
Delicious Sheep milk gem.Medium firm yet creamy, with just a bit of crumble.Excellent taste with some light funk & minerality..

I am not sure how to compare this cheese to other cheeses, Istara stands on its own. I would say between a cheddar or edam and a manchego. Flavorful and holds up well, not a soft cheese or a melting cheese

Always great
Whole Foods could do a little better in the artisanal French, Spanish cheese category. (Beyond Brie, Gruyere, etc.- which are mass produced and not artisanal.) At least they carry Istara.

I ONLY EAT SHEEP AND GOAT CHEESE - THIS IS ONE OF MY FAVORITES BUT EXPENSIVE
