Q: Will this fit a 2005 Subaru LEGACY GT?

Kind of.2005-2006 Legacy GT uses a dual-mass flywheel. What that means is the flywheel is sprung, rather than the clutch. If you're keeping the OEM flywheel, this will NOT work.2007+ LGT uses the same single-mass (one piece) flywheel as the 2006+ WRX. Exedy makes a somewhat lightweight conversion (Exedy p/n: FF502) to go along with this clutch kit.

Q: This is listed as 200mm, but the Exedy site lists it as 230mm. Is it just incorrectly listed here on Amazon?

It is the correct part but the Amazon description is wrong. I used this exact kit for my 2009 LGT (230mm 24T disc spec) it fits ALL turbo Subarus 06-09 .

Q: Will this fit a 2006 Legacy GT?

The 05 and 06 use the Dual Mass Flywheel so this clutch wont marry up to it however you can buy the FJK1001FW kit instead which includes a single mass flywheel like the 06+ WRX and 07-09 LGT. Or you can buy any 06-14 WRX 5MT specific single mass wheel to use with this clutch.
