Q: Could you snake an hdmi cable behind the shelf? Looking for a projector.

The shelves are 6.7 inches deep so please keep this in mind when considering the size of your projector. The back of the shelf is open (just the wall)... so really it depends on where you want the cable to go. The wood is a softwood so if you need to make a notch in one of the wood boards in the back for a cable to go through this would not be hard. Also the cable could easily just go over the side as well as the sides are open. It would help to know more of your scenario.

Q: What is the distance between shelves?

I would have to disagree that the vertical distance between shelves handles the majority of book heights. Most of my cookbooks are 10" or more.

Q: Would i be able to trim the wood to make the shelves a little shorter ?

Yes, you could do this but the shelves are stained so if you cut the sides this will leave bare wood showing for one side of the wood shelves.
