Francois Pralus Tablette Perou

Purchased almost as an afterthought to pair with a Marou chocolate we previously enjoyed, this bar excelled. We enjoy tasting small bites of chocolate "blind" and guessing the percentage of cacao and bean origin, and this proved to be a winner in several comparative tastes. The creaminess of the body belies the relative high percentage of cacao, and the impeccable balance of flavors and their depth are exceptional. We have a number of favorite chocolatiers, and bring home many on our trips to Paris, and Pralus (who is not from Paris) has quickly joined them.
