What it is.
This stuff is Bomb. I am baking with it these days, with almond flour, and I'm telling you. This sweetener caramelizes just like sugar and you can do anything with it. Fewer than 1.5 grams of carb in a cookie. With white flour and sugar the same cookie would be 26 grams of carb. So what are you going to do, you smart person? It's not quite as sweet as sugar so you have to use about 20% more and balance out your other ingredients when you bake. The only thing of it is, it's more expensive. But in the long run it costs a lot less than being fat or diabetic or having dental problems. So I'm in.Oh. And you can make ice cream with it. Got you now, didn't I.

Great Alternative Baking Sugar - Not Too Sweet
This is a great alternative 1:1 baking sugar that I use regularly. I don't need to be ultra-careful to keep it away from pets with it like I did with xylitol; I can just keep it on an upper shelf in the pantry but don't feel I need to lock it away. Whew! It bakes up well in all my recipes -- and tastes great.

Dissolves Tartar Rapidly
I like this product because it, mixed with some xylitol, dissolved all of my tartar, which was causing relentless pain in my gums (I add xylitol for increased sweetness, but erythritol is reported to be better for dental health). Tartar is a rock-hard substance which forms from plaque, which is bacterial waste deposited on the tooth surface. I've determined that the optimal mixture is 4 teaspoons of erythritol with 2 teaspoons of xylitol in a 12-ounce glass of warm water, which lasts all day. I swish it around for 10 or more minutes as a mouthwash, several times every day, making sure that all the teeth and gums, lower and upper, are completely submerged in it. In October 2017, my dental hygienist said I needed deep hygiene, but it was never done. In February, 2018, a dentist diagnosed me as having "deep pockets," where tartar accumulation causes the gums to separate from the teeth and thus leads potentially to periodontal disease. He recommends the LANAP laser procedure to remove tartar, but I didn't have that done. In May, 2018, I began using erythritol and xylitol as a homemade mouthwash and, to my surprise, all the tartar disintegrated almost immediately, and the pain ("gingivitis" is the name of this tartar-caused pain) went away! In October 2018, during an exam prior to cleaning, my dental hygienist said that my dental health has improved and that there are no deep pockets. The erythritol/xylitol, mixed in distilled or spring water (without fluoride, which corrodes titanium implants) with a pinch of baking soda, is keeping my teeth tartar-free, although I still brush twice every day (in the past, brushing and toothpaste never removed my tartar). In November 2018, I underwent some pre-implant dental surgery, after which I couldn't brush for two weeks, and this mixture kept my teeth and gums clean without any brushing or flossing. Although erythritol/xylitol effectiveness in maintaining dental health was known as a result of government research as early as the 1940s, this information hasn't been widely publicized (the government was seeking sugar substitutes during WWII rationing).In October 2019, prior to cleaning, my dental hygienist said that I have no dental problems and that everything looks good, and my annual dental exam also found no problems. My dental coverage allows only one annual hygiene session and dental exam but, due to rapid tartar buildup, I needed more than one annual hygiene session until I began using the erythritol/xylitol homemade mouthwash in May 2018.Thank goodness the erythritol keeps my teeth perfectly clean, because my October 2020 annual hygiene and dental inspection were cancelled due to COVID. Consequently, I'm learning that I no longer need dental hygiene. I think my teeth are whiter, too, than they used to be.

It has the same taste as regular sugar
So far I’ve only used it in my coffee just had to use more of it than I would regular sugar, I really liked the flavor, it tasted like regular sugar, couldn’t taste the difference, hard to believe it was 100% sugar free

Safe for diabetics and those trying to reduce sugar intake. Tastes just like sugar....no aftertaste.
This tastes just like sugar in my coffee! And it's sugar free, natural, and safe for diabetics. I haven't tried cooking with it. But for sweetening hot beverages, it's great. It doesn't dissolve in cold beverages as quickly as sugar. It's more expensive than sugar, but worth it.

but love sweets. I've had to curb that taste
I am a type 2 diabetic, but love sweets. I've had to curb that taste, but can't drink coffee or tea without the sweetness. This stuff is great and I feel less guilty about using it as it comes from natural sources. I've also used it in recipes, but only to reduce sugar content, not to substitute it entirely. It has worked well for me in that way.

DON’T USE FOR BAKING SUBSTITUTE
Completely destroyed a banana bread that I’ve made 30 times. It doesn’t react well to Normal baking ingredients. I won’t use it for baking again. I may use it for simple sugar replacement, like, I don’t really know. Let down by product. 1.5 to 1 cups sugar? I should have seen the red flag

The product gave me diarrhea. I didn't realize I had to use a little to get use to it. So, I am not using it for me.
