Q: It looks like these don't cover the yellow side tabs of the cleat. Won't those side tabs get damaged as you walk?

The tread of the cover sits lower than the tabs. On an uneven surface like gravel the side tabs might still get damaged, but on any even surface the covers prevent premature wear. Also the yellow tabs can be worn completely off and the clips will still work perfectly fine.

Q: Do these fit the older sm-sh51 cleats?

I'm not familiar with those cleats, but what I found online shows they are smaller and usually for indoor/mt. Bike shoes. These boots are designed for road bike cleats, generally the spd series, which have yellow or red tags. I don't think they would fit on the sh51's because they're too long.
