Good for home knife sharpening
Bought for my partner as a Christmas present. He wanted an electric one for ease and was pleasantly surprised with how well and quickly it sharpens knives. Would definitely recommend as good quality and brilliant price

Brilliant and So Easy to use
I did quite a lot of research on electric knife sharpeners, on the merits of 2 stage versus 3 stage, read professional reviews as well as customer reviews, on line reviews etc... before settling on the Chef's Choice Diamond honed two-stage rotary sharpener, Model 320.It was the right choice, compact yet with a powerful motor and whether sharpening expensive high carbon Wusthof, Global knives or something you bought from your local supermarket or hardware (or which I have all) ; I was pleasantly surprised at how easy it was to used and really impressed with how sharp the knives were afterwards - especially on my cheaper knives. I can highly recommend this model.A point of information - on the Amazon UK website, it indicated that it is 110volt (obviously for North American Customer). The model which arrived was 230v, 50hz which is perfect for all European customers. In my case with a 3 pin 13 amp UK style plug, which is what I wanted.

First Class Sharpener
I have tried loads of knife sharpeners but this is the best. The Lansky sharpener gets a sharp edge but, for a blunt knife, it takes half an hour of hard messy work to get there and it is no use with thin knives. With this system, it takes five minutes of clean easy work to sort out a blunt kitchen knife. After that, just a few seconds are needed to re-sharpen it.The system has two sets of wheels. The first set are diamond abrasive wheels for sharpening and honing and the second set are flexible abrasive for polishing / stropping. All you have to do is slowly drag the knife blade through the disks. With a really blunt knife, it will take about ten goes each side on the first set and about three goes on the second set. After that, re-sharpening will only take about two goes on each. The knives end up astonishingly sharp.As others have mentioned, it is important to read the instructions booklet carefully before use.There is a magnet inside which collects the filings. It is easy to clean it out. No messy oils are used.

Unfortunately, it’s a gamble as to if you get the right model
This sharpener has some great reviews online and on here, so I was happy to buy one.Unfortunately, it seems that if you are unlucky, as I was, the big Amazon shelf of stuff from any seller will send you a sharpener with the wrong plug. The one I received was wired for the US, not the UK. If it was a case of just the wrong plug, it wouldn’t have been too big a deal; I could have just cut off the bad one and wired a three prong UK plug on the end. But the actual machine is made for US voltage, too, so it would be dangerous to plug into a UK socket - it would probably just trip the breaker in your house but if you’re unlucky it could cause a fire. And if you did get it to work and didn’t have any danger issues, the different voltage would damage your machine over time anyway.When I contacted the seller, Oren Store, they initially wanted me to return the sharpener to the US at my own expense. I requested prepaid postage, which they provided, but they would not fill out the paperwork required by UPS for an overseas delivery (this wasn’t my choice; UPS was the carrier they selected, but when I tried to drop it off they would not accept the parcel without their proper documentation). After weeks of back and forth, they finally sent me a refund without me having to return the parcel.I will note that they were always polite and replied in a timely fashion, they just weren’t especially helpful (I made it clear that I just needed them to send me a specific document that can be downloaded from UPS’ website, but they wouldn’t or couldn’t send it). In the end I did get the refund, and I was able to find the same sharpener on a UK website (not Amazon) which did come properly wired for UK electricity. Oh, and it’s great! My knives have never been sharper.

Not easy to use
This takes a bit of practiceIf you have the classic Asian knife which is flat on one side and cambered on the other then this is one of the few sharpeners that can sharpen them. However it is difficult to get the feel of a knife going through this machine but if you get it right then it is very good. But practice on some old knives first before you start sharpening your £90 and upwards knives.

It does what it claims to do - well
I read the instructions a few times and watched the You Tube demo just to ensure that I got it right before staring. Very pleased with the results.. I found that I needed to go through the stage 1 process rather more that I thought but that was prob because it was the first time my knives had been sharpened for years. A bit confused over the bread knife though. It's not actually serated as such but does have grooves. Should I put it through the stage 1 process?

The media could not be loaded. Used once only so far and found very easy to use not at all noisy.Received with UK plug fitted which was a blessing but the instructions did make me laugh as the manual was printed back to front (see video). Was this made in China by any chance? Once reading from right to left was mastered, instructions were easy to follow.

It works!
My 40 odd year old set of Sabatier knives have become so used and blunt over the years that there was no way the steel or a manual sharpener could cope. Lots of research later I can across the Chef's Choice Model 320 which seemed to suit all my needs.Having been to read through the instructions before use I studied them closely, experimented before turning it on and then had a first go.Due to the current state of the blades it took a reasonable length of time before started to get an edge on the blade (listen, the change of note indicated when a blunt knife is approaching sharpness) but I managed to sharpen all three knifes in about a quarter of an hour.Trying the 'usual' tomato test was a revelation. The thinnest of slices is a breeze. Chopping onions, carrots, whatever is so easy.Conclusion? If you have a decent set of knives, buy them the present they deserve.Highly recommended.

Great sharpener !!
Before I would use the sharpening rod/honing rod manually..I aint no expert so I managed to sharpen my knives but they would get dull after a couple of uses!!Now my knives never been so sharp and they stay sharp!! Haven't had to resharpened yet and I used them often! It's so easy! The angles are set for you! I recommend looking at a YouTube video to use it properly, to understand how fast you should pull and how much pressure to use !! As far as the pressure.. just the weight of the knives is sufficient ! I love it!!

Read the manual... seriously!!!
Unless you're familiar with electric sharpeners... read the manual. There is a technique that will become clearer faster if you do. Being a person that thinks manuals are a waste of resources, I watched many YouTube videos on this and other similar sharpeners to become an expert. Easy peasy! Then, when my sharpener arrived I was ready to put my knowledge to the test. I unboxed it, (no video sorry not sorry), promptly placed the manual to the side, and grabbed the first knife - a KitchenAid 8" chef knife. I was ready! I was pumped! 3...2...1...!!GGG-RRRR-----RIIIIN----NNN---NNDD---DDD---DDDDI maybe got half of the knife inconsistently and not anything like the smooth operators in the videos I watched. After two more equally poor pulls I... reached for the manual. It's an honestly good manual. It will teach you things. I'm still learning and from time to time will go back and - (sshhhh) reference the manual - it's that good.Overall I'm happy with it and am getting better everytime I use it. It's actually reasonably quiet (probably the quietest small appliance in my kitchen) and was a good value.
