Q: Does this have an expiration date? Could this be considered the organic version of Maseca? I want it to make corn tortillas.

Bob's Redmill Corn Flour is not the same as Maseca. The kind of dry corn masa used for corn tortillas, pupusas, etc, is made by drying the corn and letting it sit in bits of lime (for the calcium that limestone has in it). The process, nixtamalization, changes the corn's chemical compound, increases the nutritional value, and makes it easier to grind the corn. Authentic Mexican and Central American dishes use corn flour that's made with lime. The expiration on Bob's Redmill products are usually stamped on the bag in which the flour or grain is packaged. It's important to know that once you open a package of any kind of flour, the expiration date becomes something on the order of 6 months after opening. Meanwhile, keep the flour in a glass jar with a good seal on the lid.

Q: Is this product self rising?

Yes. You would just need to make one cup of self-rising cornmeal, mix 1 cup cornmeal, 1 1/2 teaspoons baking powder, and 1/2 teaspoon salt together in a bowl. Use it right away or store it in an air-tight container until you need it.
