Q: Can you turn the lid so you can cook without steam escaping from the drainage holes? Or does the lid only fit woth the silicone pads by the handles?

You can turn the lid however, steam does still escape. I wish I would have known this before I purchased it because I cannot steam rice in this pot.

It’s a little shy of 9 inches

It is not non stick. I don’t know if you can use it on an open fire.
