Q: Can I use this with liquids?

You should be able to BUT it's not canned via waterbath or pressure canner so it wouldn't be something you could keep on the shelf or in refrigerator for very long. It removes the air from the jar & seals the lid which is great for sealing dehydrated foods.

Q: does this device take the place of boiling in the big canning pot? Im looking to start canning.

No it doesn’t. If you want to can you need a water bath canner for high acid foods such as fruit, pickles, or tomatoes. You need a pressure cooker for low acids foods such as vegetables or meats. Best to contact your local extension office about canning and possibly take a class on it. I use this device just to seal things like leftovers for a couple of days only. Also good for sealing dry goods in my very dry climate.

Q: Do you need to use new lids every time or can they be re-sealed ?

New lids every time for pressure and water bath canning. For vacuum sealing used lids are ok as long as they are able keep a secure seal. Hope this answer helps.
