Professional quality from Mercer
This hollow ground chef’s knife is a great addition to my kitchen. It’s balanced very sharp, reasonably priced, and I know it is used in commercial and professional kitchens.

I used this knife for sushi bar. It is super sharp, easy clean and easy to handle. Down side was it is more wider than what i suspected.

As good as the top ones out there.
Sharp as needed, good quality and good grip.This knife costs pennies in comparison to what it provides in quality. I do have a couple of Shuns, , a Myiabi, a Zwelling (German), Dalstrong and a couple others... this one is up there with the top and costs about a 3rd.If you're looking for comfort and functionality this is a great choice.

Sharp Chef’s Knife for a Good Price
It is the business of a Chef’s knife to be sharp. Be careful how you test this one. I touched the tip. Do not do that. This knife is shockingly sharp from tip to handle. My finger is healing nicely, thank you very much. I have not had a truly sharp knife in years, and I have learned to adjust. I now have the ability to cut tomato slices much thinner than could have any earthly use. I have heard it said that dull knives encourage accidents. I will say, I have learned to respect my knife set after buying one truly sharp knife. I bought a sharpener in honor of this sharp knife, and have discovered how dull things have been. This is a good knife at a good price. I respect this knife.

Fantastic knife
I love this knife. It's well-balanced, slices amazingly, and I really like the material and shape of the handle. The grooves really don't keep chees, potatoes, cucumbers, etc. from sticking to the blade though, so if I were going to do it over again I'd probably just get the regular 8" Mercer Genesis knife.

So far so good. Don't see the point of the "dimples". Haven't seen that they make any difference. For the price and quality, I'm very happy.

now I see the difference a good Knife
The Mercer Culinary Genesis 8-Inch Chef Knife is incredible. it feels great in your hand and can it cut. its very sharp so be very careful. I can cut onion now with no tears. it so sharp it just slices the onion with my old knife I would put on glasses to chop the onion but that did not help I would even cut it under running water none of that is needed with this knife.

Good beginner knife
Not really much edge retention. However, this was my workhorse knife for about 2 months before I found myself really needing to sharpen/re-edge. I must say though, it’s got a fantastic weight to it, feels good in the hand. The hollowed blade is fantastic if you’re a fast cutter, almost no stickage. For what it’s worth, I’d say this is a great beginner knife, but not something you’ll hold on to for that long. Unless you’re just a home cook, then this should last you a long time.This review is from a high volume restaurants point of view.
