Will this charge with phone cover fitted (iPhone 8)

Does not charge an iPhone 12 Pro Max with a case on

Can you advise of a cable or a set of cables I can buy to use to replace my current cable?

Micro USB cable is what's required

okay for samsung galaxy s10 plus?

No idea, I’ve got an iPhone XR and it’s great with that.

What does the stand flashing green and blue ?

Blue just means it’s charging and green is when it’s not and is trying to connect I’m guessing but I know it doesn’t charge when it’s green usually you have to take your phone off and wait for it to stop flashing green blue is fine. Hope this helps :)
