Can I just us the insides of the bean for baking or r they only for making extract?

Yes you can use it in baking! You slice open the pod and just simply scrape out the vanilla beans. They are fantastic! I even made a little video on it in my non-monetized Facebook group called, cooking with Aunt Shirley. I show step by step how to do this. They're great!

How many oz of extract does a pack of 10 make?

I started my first try 8 weeks ago. I used 5 beans per 8 oz of alcohol. This is supposed to make "gourmet" level extract. For "better-than-supermarket" level my recipe says 2-3 beans per 8 oz alcohol. You can start using it after 8 weeks, but for great vanilla 6-12 months is recommended. I will try a little soon, but wait as long as possible to use the rest.

What is the length of these beans?

My vanilla beans are 7 3/4" long. They are wonderful and very moist.
