PerfectaGel Gold Gelatin Sheets (200 Bloom) - 20 Sheets

Dissolves easily with great end result. I've been looking for an odorless coagulant for a while to make the perfect Almond tofu, and this gelatin absolutely delivered. The tofu was nice and soft, with very even mouthfeel. Note: I've learned online that gelatin generally yields softer texture than agar agar or konjac powder and the higher bloom values also gives a less "muddy" end result if you are looking to make a clear jelly. Looks like it's also important for it to be made from pig collagen.

Just follow the directions on the resealable package and it makes gelatin simple and easy. I used these sheets to make fruit gels. Made with gelatin and fresh juice, these sheets made the candy smooth and chewy. Did not leave a grainy texture as some granular gelatins do.

I had been using the platinum PerfectaGel (230 bloom), but the large packages of it became unavailable. I was a little worried that the lesser bloom-rating (200 as opposed to 230) was going to be an issue with my unmoulded, tall jellies, but honestly, the difference isn't obvious and I've stopped worrying about throwing in an extra quarter of a sheet to compensate for the difference. The gold version is a little less colorless than the platinum (it has a slight yellowish cast) but that doesn't make any real difference (except, perhaps, if you were making a clear, colorless jelly and it was going to stand side-by-side with another jelly made with the platinum product). Like the platinum version, these sheets melt beautifully, and have essentially no taste or smell. Use these once, and you'll never go back to Knox powdered gelatin! I still keep a box of Knox for test jellies and for very strongly flavored aspics (e.g., seafood) in which no one will ever notice its faint sweat-socks aroma, but I use PerfectaGel for everything else.

I've never tried using gelatin sheets and decided to try these for the first time. I ended up really liking these! I was looking at a recipe that called for gelatin and listed gelatin powder OR sheets. I didn't even know that there were sheets and these worked amazingly! They didn't add any funky flavor either. There are directions on the back of the package about how to use them(just in case), and the packaging is so pretty! I will definitely be buying more and will recommend to others!
