Matte, and also gritty. The grittiness is intentional as it contains pumice or something similar. It seals as well as other acrylic mediums. For a sealer, look at other acrylic mediums that are meant for this. And it's definitely NOT a varnish because it dries somewhat milky.

Can this be used to cover mistakes or to reuse an already painted canvas?

If you’re referring to white gesso , yes you can cover an old painting with one or two coats. Clear gesso will also allow you to paint over it but you will see the image you’re covering as you paint.

Would someone recommend prepping a metal surface for painting with this product a necessity? (I am unfamiliar with Gesso)

Yes, it will be beneficial to prep the metal surface. You will want to roughen up the surface with steel wool or sanding paper. Then be sure to wash it really well to remove any oils or debris. Then you can apply the gesso.

What's the difference between the Liquitex "Professional" gesso and the "Basics" gesso?

I had used only Liquitex products (gesso and paints) for years. Due to the expense of painting, I decided to try the Liquitex Value Series Basics Gesso. It came in a 1.89 ltr. (1/2 gal.) bucket. I have never been more disappointed in a product!! I used it, but it was difficult to use because it had the consistency of Jello. It did not thin well, and even had lumps that needed to be strained out. I still have 1/2 of the bucket left, and only use it on projects that do not require a fine texture. I would NOT recommend it.
