Q: This is too expensive with shipping for me to make Detroit-style pizza with. Is there another cheese someone can please recommend?

I'm from Detroit. Won't be exact, but you can come very close with a mixture of half white cheddar, half Monterey Jack. Crisp crust comes from spreading the cheese all the way to the edge - cheese touching the pan side during baking makes it crisp.

Q: Are the 8oz blocks sealed in airtight packaging? Wondering if I can buy extra and keep for months unopened.

Hi Jason, No, unfortunately the 1/2 pound Bricks are not sealed. We get the 5 or so pound loaves and do our own cutting. If you would like to buy whole loaves, you may do so by calling the store directly. (608-873-1777) Thank you, Peg @ Cheesers
