How many can you make out of 5lb bag of concrete?

You said 5lb bag but I am guessing you meant 50lb bag of concrete. I buy the concrete in 60lb bags and it fills exactly 4 molds with no extra left.

Do you have to seal the concrete after it dries?

You can, but you don't have to. The sealer will just prevent stains and it will last longer.
