Does this Smoosh flat under the weight of a person?

It doesn't "smoosh" flat and it does provide a mild arch and the added insert increases the arch - and it's more comfortable than the plastic versions, but it doesn't arch the back as much as the plastic versions do.

Can you use all night to sleep on? Or use in your office chair all day?

I dont think you would want to sleep on this. One, it is to be used a short time to stretch the back and is not particularly comfortable while doing that and two, you arent going to stay in one position all night without moving. You could use it in your office chair but unless you are sitting hard against it, it will want to move. Both the uses you have asked about are not what the product is for and there are other products designed for chairs and sleeping that would be better. This is for short duration stretching the back muscles.

Does this flatten like a pancake when the weight of a person is on it?

I suppose it depends on the weight put on it. It didn't for me. It's more comfortable than those hard plastic ones. Though there is some give to it, it doesn't just flatten out.

Will this work with a 300lb person

It is very firm and I think it would work.
