How does the usb connection work? Is the device recognised as a sound card by the PC?

Only used it with a Raspberry Pi, sees it as USB Audio O/P device.

Only if your turn table has a built in pre amplifier, if not you need a pre amp before the st-01. They make a different little valve amp with a pre amp built in if you only want the one amp.

How sensitive is the volume adjustment and can it be changed with the remote control?

Volume adjustment knob on the device is finely graded and has some resistance built into it so you can't accidentally overshoot your desired level. Same applies to the remote control which unfortunately is very basic but responds very well to incremental clicks to increase/decrease the volume. Amusingly, the remote control sensor picks up some commands from my TV pilot.
