Hi, I just received a large bottle of honey today, only thing is it’s very, very discoloured. I’m new to this, using for cereal and coffee. Is this ok

Keep the bottle in a warm cupboard and see if it gains the colour back. Usually when it’s cold, honey discolours (whitish) as it freezes

The expiry date on the batch we currently have is July 2020

Would this be OK to use in a basic mead recipe?

This would be fine to use in a basic mead recipe, and I have. You get different kind of flavours from different honeys, and there are all different opinions on which kinds are best, but a lot of that comes down to personal preference. This honey has not been heated (pasteurised) which keeps more of the floral elements which come through in the mead. It's not the best honey, but it works nicely for the price.
