Can you close off the drainage attachment as an option?

Nope. Not without sealing it up.

Are the legs on the extendable tray easily removable?

Only the front legs can be removed easily. the others are stationery and can't be removed.

Is the whole product stainless steel or is part of it plastic?

The whole things a composite plastic except for a small piece for knives that is a wood of some kind. I was initially turned off by the seemingly flimsy product. But once all the pieces are put together it is solid and pleasantly light. And the drain piece is delightful, as there’s no accumulation of slimy water at the bottom. I’m quite satisfied with it.
