I just bought niban... and carpenter ants dont care about it! they just walk on it! are they suppose to eat the product? how do i know it's working?

This is essentially boric acid which shuts down their digestive system once eaten. It takes about a week or two to see results. We used it for crickets and it is extremely effective - and we tried a variety of traps, and other non-poison methods first. This one works.

Does this product work on fire ants?

Use advance 375a. Thats what I use in my yard for fire ants.

Could this potentially kill mice if they eat enough?

It's not for mice. Use contrac blox.
