The flavor is great, but cooking them there are some problems. First I boiled a pack and the center sausage’s casing ruptured. So I lost one sausage. Next I steamed a pack and again the center sausage’s casing ruptured but this time I was able to scoop the contents out of the steamer and enjoyed it. Did the steamer one more time and once again the center sausages casing ruptured.

Best to pick these up on delivery. These were delivered to the North Central US and they were still very cold, between 35 and 40 degrees, which is all right for seafood.

I have been buying this brand alligator sausage for years from other companies. This time I bought them off at Amazon. I used them all the time in my gumbo these were the worst alligator sausage I have ever purchased. They disintegrated there was not one piece of gated sausage in my gumbo they would disgusting after frying them and taking them out of the pot. They literally sell a pot. You could not slice them. They will mush to disgusting. Be aware, I'm warning you don't buy them disgustingly gross

This was excellent used to stuff a bacon wrapped pork loin with Comeax Mild Boudin.Great flavor and not spicy.

I didn't like it that much. I put it in the microwave and it was horrible.

Ive been watching Swamp People on the History Channel for awhile, seeing them catch and kill and cook gators. Got the idea to try some myself. These taste great, airfried one on 400F for 15min. Was fantastic.
