Can this be watered down as kimchi "juice" to make kimchi stew?

Yes, it can be used for almost everything. Makes great Kimchee also.

Anyone use this as a broth base like the ramen noodle flavor packets?

I use it as a hot sauce and also for a beef jerky marinade. If you like a lil spice add like 2 TBSP to a ramen pack, it is salty af tho, the salt will overwhelm you before the spice does

basic kimchee recipe using momoya kimchee base ? ratio for a 15 oz. bottle

I don't have a recipe that I follow (Surprise!), but I would say a bottle to 2 to 3 lbs of Napa would be good. I found that if you put the dried red Korean chili powder Amazon has also it make the stuff just super. I usually chop up some Bok Choy and Daikon to add to it. Good luck and Good Eating!

Goes well mixed

Pretty good , but does have a strong taste of the fish ingredients. Alot does go a long way. Mixed with a little of rice vinegar, sugar, sesame oil and minced garlic. Cuts down the time and less amounts to make your own sauce and Came out delicious.
