Im surprised no one asked this question. It says it doesn't go over 158° recommended temperature of poultry is 165° How do you cook chicken in it?

Hello Mike Bedford, Thank you for your question. You can free use SousVideArt coker till 194 F. But the main idea this method is to cook meals at low temperature. According to the famous cooking book "Sous Vide for Everybody", the best temperature for poultry is 150F, for tender steaks is 126-134F. So, you can choose any temperature till 194 F. how exactly do you get the air in the bag to go out through the valve? For me, it can't make it because the other side of the bag is up against it.

What is the diameter of the part that's immersed in the water?

The diameter of the part is 3,1" like many others sous vide immersion cookers. But if you would like to use sous vide cooker that has more compact dimensions you can find in our store other models of precision cooker. One of them has a smaller diameter and it is more convenient in using.
