What is shelf life opened, unopened?

The olive salad will last about 6 months unopened. If it is refrigerated and unopened it can last up to 18 months.

what are the ingredients?

Olives with Pimentos, Oil Blend (Soybean/Extra Virgin Olive Oil), Cauliflower, Carrots, Celery, Kalamata Olives, Red Bell Peppers, Capers, Pepperoncini, Water, Vinegar, Salt, Spices, Garlic and Calcium Chloride, Potassium Sorbate, Lactic Acid, Sodium Bisulfite and Yellow No. 5 as preservatives.

Are the veggies crunchy?

It’s mostly olives, so I would not classify this as, crunchy. However, it is the very best olive relish you can buy.

Both the lids on my jars were not sealed. Leaked inside bubble wrap. Are these typically vacuum packed?

I have never received a jar that was sealed or vacuum packed. Nor have any leaked during shipment. I would contact whomever packaged the product and let them know. 3rd parties do sell the olive salad and if its Amazon (bought and shipped) they will probably make it right.
