Question 2

The ingredients only lists maple syrup. What gives it the bourbon flavor; shouldn't that be listed?

The bourbon flavor that they describe comes from the barrels in which they age the maple syrup.  The barrels were originally used to ferment bourbon and repurposed for the syrup.  This is technically not an added ingredient, just a little flavoring.  Absolutely no alcohol would be transferred over in this process.

Natural maple syrup requires refrigeration after opening, otherwise it gets some kind of mold.

ALL 100% pure organic maple syrup is Grade A. See below details for what was previously known as Grade B.

A new maple syrup grading system went into effect on January 1, 2015. Historically, the USA and Canada had different grading systems, and states and provinces also had their own rules. The maple industry aligned and launched a new grading system that includes color and flavor descriptions. Since 2015, all maple producing regions of the USA and Canada implemented this system. With the new grading, ALL maple syrup is Grade A.
