Very versatile, great for all kinds of savory dishes
This stuff is like the Swiss Army knife of savory seasonings in my kitchen. Sure, it's not going to give you that deep, complex umami you get from properly made dashi with kombu and katsuobushi - but honestly, who's making that at 6:30 on a Wednesday night? I've found myself reaching for the Hondashi way beyond Japanese cooking. Throw a pinch into any soup or stew that needs a savory boost. It works surprisingly well with Better Than Bouillon to create this powerful one-two punch of umami - I do this combo in everything from quick ramen to pot roast. Last week I even sprinkled some into my mushroom risotto and it really amplified those earthy flavors. The powder dissolves instantly and doesn't leave any weird fishy taste, just that pure umami backbone. Think of it as MSG's more sophisticated cousin. Only reason it's not getting 5 stars is because yeah, real dashi is noticeably better - but this is so convenient and versatile that it's earned its spot in my everyday cooking arsenal. Just don't make the mistake of using it for a proper chawanmushi or other delicate Japanese dishes where dashi is the star. Keep some proper dashi on hand for those.

A dash makes a difference
When a recipe calls for Dashi, don't just take a pass. This delightful and affordable treat should be a kitchen staple and adds a delightful dash(i) of salt and umami to any dish, even if it's not called for. And remember, it already has some salt and MSG so no additional salt may be required. Also, MSG can be considered a more healthy "salt" substitute according to some recent research I've seen. So, enjoy dashi, and not just for making soup - I used it in a Gyudon Japanese sliced beef and rice bowl dish with soy, sake & mirin.

Great dashi base!
I finally decided this is my go to dashi base. I use it primarily for miso soup base, but also use it for ramen and udon noodle bases too. I was always going between this and the sachets (Ajinomoto always!) because it is almost half the price as this jar. However, the jar keeps my dashi more fresh. Which makes it last longer. I do between 1/3 and 1 tsp of dashi per 1 cup of water. 1/3 for my daughters, 1/2 for my wife, and 1 tsp for me. Then I use between 1 and 2 tbsp of miso paste. White for the kids, 1 tbsp white and 1 tbsp red for the wife, and 2 tbsp red for me. I'll boil the dashi, add any veggies, remove from heat, then add the miso. In any case, this dashi powder is 85-90% as good as Bonito flakes. It's totally worth the almost double the price of the sachets, the only time I'll buy the sachets is when I'm cooking for a group of friends, otherwise I find if I'm not finishing the whole sachet in a week to a week and a half, it starts to lose flavor and starts to taste like my fridge. With this jar, I can keep the jar for months with no issue. Buy with confidence!

So happy I tried this on a whim. To get the true taste of miso soup fast and easy in the morning this helps to cut down on time but adds so much flavor. Will order again once I am through the bottle.
