Does the stainless steel go partly down into the spatula? Or just to the top of the silicon spatula?

The stainless steel shaft goes down approximately one inch into the spatula base. I use mine quite often with no negative results. Great item.

Will it not scratch my nonstick coating on thr pan? It's pretty hard. Silicone layer is thin!

No it won’t scratch, I have a high end non scratch pan. You will be happy with these.

how wide are each of them?

The spatula is tapered. It is 3 inches at its widest point.
