NO you must use chips .sold in a bag . If you cut your little 2 inch logs into small chips they must be DRY . There is not enough heat in the burner for Big pieces of wood.

Q: can the temperature be adjusted depending on the meat or recipe you are using?

No, there are no temperature controls on the unit. However, you can smoke a variety of products including meat, fish, etc. For more delicate foods, you would simply reduce the smoking time. The instruction booklet has some recipes and there are many more online.

Q: need to replace heating element, where do I order from?

They have replacement elements on Amazon. Be sure to verify the model/ year yours is first. They run in the $15.00 bracket. If they are out of stock you can order from the factory ( ref your Smokehouse operating directions for which size element you need.
