Awesome knife
I used to work in kitchens and I still cook alot for guests and friends. This knife feels good. The handle has a nice non-slip coating that feels like a dense, texured non slip mat. It's also a nice shape. I originally thought the handle might be too small but it's pretty balanced. There is a little bump just on the top underside of the handle that feels like a left over from the manufacturing process. I thought about removing it but I decided to just ignore it.The blade itself has a good weight. You don't get tired using it. It's also wide enough so when you press down on the back of the blade with your palm for more force it doesn't dig in.As an added bonus, when you pick it up it feels like a tool. It doesn't feel like a posh, name brand, "proressional" foody, forged Damascus show piece that lives in some sort of hermetically sealed, ancient oak knife block.It's a good knife, if you need a good big knife. I guess that all in trying to say.And to the people complaining about it holding its edge... Get a honing rod.

Poor man's Wusthof classic in other words AWESOME value for the performance you get
This is an excellent high quality German steel forged chef's knife. Sure, it's put together in Taiwan but the materials used are quality. I cook a lot and I can tell you that the more you use it the more you love it. For me the only two knives I seem to use now are this knife and the Mercer Genesis Santoku and NOTHING else, save the occasional paring knife for peeling. Balance is excellent and the material in the handle is easy to grip even after all kinds of gunk gets on it. As long as you keep the knife honed it performs admirably. I like the length of the 10", for some it's a little too long but for me it works great and allows you to cut long vegetables lengthwise with ease. All in all this is a great bang for your buck knife and I can't recommend it enough. Those with smaller hands may opt for the 8" version. My wife says this knife is too large and always reaches for the Santoku which is another excellent knife.

Good quality, low price
Bought this to replace my workhorse ten inch Forschner chefs knife that is forty years old. Surprisingly good quality for the price. Extremely sharp and holds an edge. Well balanced with comfortable handle. Good weight, forged blade. The knife is way bigger than ten inches, but that is not a disadvantage. Happy with my purchase.

A Top Notch Chef's Knife
I was getting desperate to find a reasonably priced, good quality kitchen knife. Fortunately l read an excellent article by a professional chef that directed me to this Mercer chef's knife.The price is reasonable, the knife is sturdy and comfortable, but most important, it slices through a tomato like slicing through butter. To say l love the knife and am pleased with its quality is an understatement. This is my go-to knife and highly recommend it.

Decent knife, but not "Heavy Duty"
I am a line cook at local restaurant and I mainly use this knife to cut vegetables. It's a very nice knife for the price. Large bolster provides comfort during long, excruciating prep work, and the nice weight also helps cutting vegetables easily. However, that being said, the edge on this blade only holds about a week. I have to sharpen it every week using my 1000/6000 whetstone because the edge just gives out. Comparing to my Tojiro DP Gyuto, which holds an edge extremely well and I only have to sharpen it once a month, it's definitely a letdown.Then again, I usually have to prep 25 lbs of carrot, 35 lbs of celery, 50-100 lbs of onion, 50 lbs of broccoli, 50 lbs of cabbage, 25 lbs of green bell peppers, and 10 lbs of green onion, so it might just be the sheer number of items that I have to cut giving this knife a hard time. While I don't regret purchasing this knife, if I knew it would give out much easily compared to VG-10 core knives, I would have definitely purchased more expensive knives such as 10.4 inch Tojiro DP Gyuto or 8 inch Zhen 3-Layer Chinese slicer.So, if you are either a chef or cook in a small kitchen or experienced home cook, this knife can definitely provide lasting edge and comforting grip for you. But, if you are in a position where you have to do heavy-duty work, I would invest 40 more dollars for better knife. While the initial investment might be more expensive, it would definitely save you a hassle of maintaining your knives.

Great Sharp Knife
This is a very very sharp knife so you need to be careful when handling it. I highly recommend keeping it in its cover when not in use. It’s also a really great knife. You won’t be disappointed if you purchase it!

I just bought my fifth Mercer Culinary knife (a flexible boning knife)
I'm a home cook, long-time retired, my many hobbies fill my days with fun, focus and friendship.I was ten-years-old when I fried my first dozen of frogs legs, and twelve years old when I baked my first loaf of bread (bannock) over an open fire. Baking and Cooking provide me meditative calm weekly and daily respectively.In 2018 I began replacing my sixty-year-old German made kitchen knife set. New, it had cost more than a week's salary. The knives never held an edge very well. My first replacement was my chef knife with a Mercer Culinary Renaissance Santoku blade. I purchased it, with some skepticism because of its modest price. Within the first week's daily use my skepticism was gone. Since the n I've purchased a bread knife, two boning knives (including today's purchase), and a 10" Genesis chef Knife. I purchased this knife to facilitate one-draw slicing of beefsteak tomatoes, fish fillets, homemade summer sausages, etc.. I've used it frequently for one month with 100% satisfaction.I test the sharpness of my knives following each use. I have never had to do more than a brief honing on a leather strop to regain their razor sharpness.

Good knife
Watch out it comes sharp out of the box. Goid weight and feel. Used mostly for meats.

Love it!!
I bought this knife cause I like cooking at home. I'm not a professional even thought I took some culinary classes years ago. Be Aware! Very sharp knife out of the box!! Cut a finger tip pretty bad while cleaning it for the first time. I was probably just to exited to use it for the first time.Good balance, good grip, blade long enough so you don't need to lift the tip of the knife from your cutting board to cut small to medium size vegtables or fruits. Cleaning is easy (not for dishwasher). I love this knife so much that I just bought an other one but an 8" blade for my wife who's scared of the 10" blade.

Great knife!
After returning 2 other simular chef knifes, I finally got what I paid for! The blade is about 50% thicker then the ones I returned, handle is comfortable, feels great looks great, the third time was a charm.
