Perfect Replacement for Bob’s Red Mill Pastry Flour!
Since Bob’s Red Mill discontinued their pastry flour, I was on the hunt for a good substitute. I discovered that White Lily All-Purpose Flour has a protein content of around 9%, which means it has lower gluten than most other all-purpose flours. I gave it a try, and it worked perfectly! The texture came out just what I was looking for.

I love the lightness of the flour. A very fine good flour and great for baking. Kind of expensive for flour. But now that I've tried; I have to have it in my cooking
