We tried birch syrup for the first time this winter to spice up our holiday baking. I didn't even know that it existed. The taste is very unique, flavorful and easy to bake and cook with. I made a glaze for my apple tart with apricot and birch syrup. I also used it with balsamic vinegar for our spinach salad. A very little goes a long way, so the price is worth it. So Canadian.
