You could definitely use them on a pumpkin if you weren't planning to cook and eat it. The paints are acrylic.

No..the acrylic is not washable.

Would these show up on black paint?

They might but I don't perceive them to be very dark. There isn't a lot of ink in each of the pens. The ones I purchased had several that ran out of ink pretty quickly.
