If I put crackers in one side and fruits in the other, will the crackers stay dry and crisp?

Within reason. The sections are not air right but if you put in fruit that has been well drained/isn’t enormously wet, it’s fine. I often put dry crackers in a reusable snack bag separate from this container, if it’s a big concern. I also position this container with the wettest food down in the lunch bag.

Will this hold 2+ cups of greens with room to spare for protein, etc so I can eat from it?

I'm assuming you are talking about raw greens (salad). I don't have this size container, but it will hold slightly more than two quarts, so I'd just put your salad into a measuring cup (1 qt., if you have that size), to see if this size would work. I believe you could make a pretty good size salad for this container. I make very large salads for myself, with boiled eggs, tuna, etc., and this would be just about right for me.

Can the 10oz size hold a bagel?

This 10oz container is too small to hold a Bagel. Possibly a 12oz would do the job
