In the United States, in order for a vanilla extract to be called pure, the U.S. Food and Drug Administration requires that the solution contains a minimum of 35% alcohol and 100g of vanilla beans per litre (13.35 ounces per gallon).1 Double and triple strength (up to 20-fold) vanilla extracts are available.Vanilla extract is the most common form of vanilla used today. Mexican, Tahitian, Indonesian and Bourbon vanilla are the main varieties. Alcohol evaporates faster than water, so if you like the flavor of a wine or spirit, heat it slowly, uncovered. DO NOT BOIL; that would be a fire hazard with spirits. Hi there, McCormick extracts were reformulated in November, 2010. The new formula removes corn syrup while keeping rich McCormick flavor. There is no corn syrup in McCormick Pure Vanilla. ~ Erica
