Will the brine jr hold a turkey or is it more for chicken?

Yes, it will hold a smaller turkey, but I can't say the exact cut off since I've not tried a turkey yet. The dimensions are about 8.75 diameter (size of a paper dinner plate) and 11.5 inches tall. I was able to brine two chickens at once.

Is this bucket large enough to cure a brisket flat or point for making pastrami? I'm not looking to cure a whole packer

Yes you can brine a smaller brisket flat!

Does anyone know if this container can be used for sous vide?

You could. Although I haven’t used it in that way, I do have a sous vide and I could easily see it working.
