Q: how much adjustment are in the light directions,,, will they point parallel (to the wall) down a hallway

I'm not sure if the will point a full 180deg from each other but if it is mounted on a wall it would illuminate a hallway in both directions due to the beam spread of each lens.

Q: Can these be ceiling mounted?

Sure. Just note you have to provide power, 120 or 277, and a stable mount; acoustic tile may not be good enough if that's what is on your ceiling.
