This ravioli roller is the real deal !!
I purchased a pair of these rollers after my sister-in-law agreed it was time for the two of us to make the beloved ravioli/meatball/sausage and sauce for the family. Our dear mother -in-law/mother has worked very hard for decades providing this family favorite. It seemed only fair that other family members should step up to learn this very special and complicated process, as it is a beloved tradition that must be carried forward. To make a very long story short, I am happy to report the following - 1) Evidently, these rollers pass muster with the m/mil. High praise considering hers are from Sicily and are over 200 years old. 3) These rollers roll and cut exactly the same way as the family heirloom roller from Sicily, and appear to be for all intents and purposes exactly the same. Same wood, same construction, same quality.

good times
I bought this rolling pin in an effort to improve my ravioli-making efficiency. It does a good job. Automatic filling allocation? check. Sealed edges? mostly check. Awkward length? check. I find that my pasta roller rolls the dough to a width of about 3 squares on the rolling pin. This makes the 17" length of the pin unnecessary. But it works, and it's faster than the 12-at-a-time ravioli trays (although you'll get slightly less filling per ravioli, here). All in all, this is a great tool that makes me happy when I get to use it.

Easty to use
I loved my new rolling pin. It was easy to use. We make ravioli by rolling out a sheet of pastry, spreading filling on half, then fold the other half on top. This pin made marking the squares so easy. I might actually make them more than once a year now. A couple of pointers: 1. Make sure you do not use too much filling, it should be a thin but completely covering layer. 2. Flour the pin and the top of the pastry generously to keep from sticking 3. Roll in smaller batches so that the pin can cover the entire width at one time 4. Press down firmly on the pin with one hand on either side of the center of the pin - not the handles. It takes a little practice, but the squares were the perfect size and held together nicely.

Wonderful!
This pin is awesome, high quality (made in Italy), and most of all it makes ravioli-making a pleasure! As someone who used to make ravioli by hand, or with a metal stamp, using this pin is a relief and much more efficient. You can make hundreds! As a note this pin is made by Eppicotispai for Norpro. I'm not sure if Eppicotispai 20-Inch Beechwood Ravioli Rolling Pin is identical, but if it is you may be able to save yourself $5-$10. Minus 1 star for Amazon possibly selling the same product at a higher price-point. Tips: Blend or puree your filling. Watch the video suggested by another reviewer, it's a great demo. And if it's your first time making pasta or ravioli be prepared to make a mess of your kitchen.

great buy
works great. i have used this pin now for over 3 yr and i make a lot of fresh ravioli . no issues. simple, works and is worth the price. only con, the finished ravioli is the same as that famous "chef in a can"... so if your looking for 3" squares, this will not work. makes ~1.5" sq. To make ravioli you will need to buy 2 other items however: - standard rolling pin - ravioli wheel both available on amazon im sure

Great idea but just didn't work well for me
I used this for making ravioli, thinking that it would clearly mark the squares for putting filling in when making ravioli. I was also under the impression that I could just roll out another sheet and place it on top for the second sheet and that I'd just have to line it up and then crimp. In order to get even the faintest marks on my dough I had to push down with the roller as hard as I could. I'm pretty strong so I was surprised that I didn't get better results. You could barely see the lines and there was no way to easily place the top sheet on without making a total mess. Also, the roller is made of a soft, unpolished wood, not hard polished wood like my other wooden roller, so my dough stuck to the roller as well as to the mold part. Even using extra flour didn't help with the sticking issue. This looks like a great idea, maybe I was doing something wrong, but it just didn't work for me at all.

This product makes it easier to make ravioli . It is sturdy and the wood is excellent for this product

Great quality rolling pin
Homemade ravioli is a family tradition, and I use a rolling pin just like this that was my grandmother's. My daughter is now grown and on her own, and has been trying to master the family recipe. She asked for my rolling pin, but I just couldn't give it up yet! I found this one, ordered it, and I am very impressed. While I haven't used it myself, I am very impressed with the quality of wood and construction. I almost feel bad giving it to my daughter as I don't know that she can yet appreciate the quality of this rolling pin! I can see this rolling pin becoming another family heirloom.
