DELICIOUS! Quality ingredients, easy to follow instructions and the end result is a delicious cake that everybody requests the recipe for. One box makes an 8 inch cake, 2-3 inches high. If you want to take this cake, totally over the top, throw a handful of fresh or frozen raspberries into the mix and add 1 teaspoon of instant coffee powder or granules. I use decaf coffee granules. This cake is super rich, incredibly moist and beyond delicious. We bake two boxes and sandwich them together with chocolate ganache or buttercream. It also makes beautiful cupcakes!

I'm a perfectionistic "farm salt of the earth" baker that's travelled within UK and EU. Confession, I visited a LOT of bakeries. This baking mix base is extremely versatile and fast! I've made Pear blackberry muffins with lots of healthy seeds and nuts, Pistachio Date, chocolate raspberry, chocolate Nutella, wild POW citrus and wild blueberries. Everyone goes nuts asking for more! I do subitute and use single creme and real full-fat Irish butter, and add an extra egg( use room temp good eggs now). I wish they sold this in 5 lb. Bags please! Peaceful baking!

I purchased the Simple Mills Almond Flour Vanilla Baking Mix to make a birthday cake for my two-year-old. I appreciate that it’s made with simple, clean ingredients and is gluten-free, which made it a great choice for our family. The texture came out moist and tender, and it baked evenly without sinking in the middle. That said, the vanilla flavor was much lighter than I expected. It’s not bad, just subtle—if you’re looking for a bold vanilla cake, you might want to add extra vanilla extract. On the other hand, the mild flavor makes it an excellent base for other recipes. I think it would be perfect for banana bread, carrot cake, or other bakes where you want the added ingredients to shine. Overall, it’s a wholesome, versatile mix that I’d use again, just with a flavor boost depending on the recipe.

After trying numerous recipes using almond flour, I had just about decided to give up on wheat flour alternatives. I am no Betty Crocker so I’ll never know where I went wrong or how it could have been fixed. After seeing the reviews and the ingredient list for the Simple Mills Muffin & Cake mixes, I order 3 flavors right off the bat (chocolate, pumpkin spice, and banana). They all turned out beautifully moist and delicious. I do need to mention that I did have some doubts about the banana muffins. Fresh out of the oven they were rather bland but after being frozen, thawed, and reheated they were a lot better. I will be reordering.

Delicious! I made it for a church potluck. And it was a hit! Made with cream cheese frosting on vanilla cupcakes. But someone said it reminded them of carrot cake. There was 25 between the chocolate and this almond flour baking mix. There was nothing left! All were eaten and brought home with them. The texture is moist soft, flavorful and a bit heavy, but still puffed up like a cupcake should. The price is high but it’s worth it. Just follow the directions you will love it!
