I've got an old British Enfield 303. Will this holster fit and if so how barrel length will be protruding?

This holster won't fit a rifle.

On a 4" Ruger GP100 how much of the barrel is exposed out of the of the holster? is there an option to get a completely enclosed kydex holster?

With a 4" bbl, none would be exposed. Anything longer would. Barrel end of holster is open.

Will it fit a S&W 627N .357, 4" barrel?

A N frame should fit well My 44 M fits like a glove. Highly recommend
