About the Author Helen Leach is an Emeritus Professor of Anthropology at the University of Otago. Her research interests include the evolution of human diet and prehistoric horticulture. Her book, The Pavlova Story, was shortlisted in the Montana NZ Book Awards 2009. Mary Browne is a leading food writer who updated and photographed twelve classic pavlova recipes for The Pavlova Story. Raelene Inglis is a researcher in food history. A delight for the mind, eye, and palate
I love fruitcake. I bake fruitcake. I treasure the New Zealand style Christmas cake with its double almond and fondant icing. So how could I not love this slim volume on the history and science of fruitcake from Renaissance times till today? The authors blend historical research on cooking, ingredients, and social customs with sound food science, thorough recipe testing, and gorgeous photography, to delight modern fruitcake bakers and fruitcake eaters. I've tried two of the recipes with excellent results and look forward to baking the rest of them.This is the perfect holiday gift for any connoisseur of Christmas cakes.
