hello, i would ned to use this filters inside my water dispenser (to filter the water whithin the noozle). Are these water/health safe ?

They are just stainless steel so I don't think there is any health issues with using these and as for water safe I'm not entirely sure but I honestly can't think of a reason why it wouldn't work for your use.

what is the mesh size 30 or 50 mesh ( what is the size of the holes)?

I'm not 100% sure but held over some 40 gauge rosin bags, it's comparable, it's not exact but it's close enough to the size. They fit in all the bongs I have.
