Q: How strong is the rack? The photo shows a small cast iron pan on top; could one actually store a 12-inch cast iron pan on any but the bottom rack?

I don't know about cast iron but the 10" heavy gauge aluminum pans I use seem to max out the wire shelves. There is no clearance for lids either. But for smaller pans 8" or less it seems to be ok.

Q: what is the max height pan that would fit?

The space between each rack is 2 1/2 inches, so unfortunately, this will not accommodate a 3-inch-high pan. We had two 3-inch pans that had been destined for this organizer, and now we will not be able to store them there.

Yes you can hang it to the wall.

Q: Can this be used for baking sheets, muffin tins, etc?

These types of pans are not normally used for baking in the oven(because of the handles), but are used for stovetop cooking.
