Great budget santoku that punches above it's weight
Originally bought this to keep at my mom's for when I cook over there but I've been using this at a new job where people are a little less knife care conscious than I am and it has held up really well. It is very comfortable in a pinch grip unlike the fibrox style handle these usually have. Thin enough and tall enough and a very gentle curve without too much belly and a decent flat spot at the heel so you don't get those annoying accordion cuts on green onions and basil. It's very lightweight which feels really nimble and is nice on my aging chef hands. This is a great knife for a home cook or for a pro chef that doesn't care if this isn't a piece of art but a very functional tool. It responds well to stropping and comes back to razor sharp with a stroke on a ceramic rod. If I were a knife salesman this would be my number one recommendation for a budget santoku

Another great Victorinox
I wanted a smaller kitchen knife and I’m very happy with this overall size. The edge was superb out of the packaging (I believe this is what you pay for with victorinox on this series) and is a great compact all around kitchen tool. I use a victorinox 10” chef’s knife and wanted a smaller knife, I thought the 8” chefs knife too similar to the 10” and I wouldn’t be satisfied, so I went for this Santoku style. If you don’t drop these in the sink or wash them in the dishwasher the edge retention is decent (packaging says dishwasher safe, but this will dull your edge prematurely). They are not fancy but are comfortable to use, and based on performance they offer high value for the price.Victorinox makes excellent kitchen cutlery that performs amazingly well.

Great knife from Victorinox.
I love the Victorinox line of knives, and this one gets a lot of use. It's easy to grip and keeps a sharp edge. Also, it's great to just put it in the dishwasher and get it clean.

Always sharp and balanced. What you expect from Victorinox.
Sharp. Nice balance. Easily to wash. However, don't drop it tip first on a concrete floor - it will crinkle the tip. But on a sheep-foot pattern, tips not that important. So 5 stars.
