Ever look at something and think, "That is just too good to be true"? I thought ceramic knives would be brittle and couldn't possibly be sharp enough to do the job of a steel paring knife. These knives have proven themselves as efficient and sharp paring knives. They put up with a reasonable amount of sidewise force (not purposely trying to break them). I use them for vegetables and fruits (their main purpose) or for cutting a sandwich in half. I was surprised at how little damage they do to my skin if I should slip.
