How many cups/quarts does it hold ?

It holds 8 quarts. Plenty deep for frying chicken. I even steam by putting a rack inside, and adding a half pitcher of water. This thing is huge for all of my needs.

If there is an adjustable heating dial, where is it located? I don't see it in any photos.

It says it uses 650 watts. This is in our tornado shelter and our generator only has a max 1500 watts at a time.
